Baked Vegetables & Bacon

I love baked vegetables and the icing on the cake is when there is bacon along with the vegetables. Here is my take on the Baked Vegetables with Bacon. I hope you enjoy it too!



Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 2

Ingredients:
  • Beschamel / white sauce  -  2 cups
  • Beans - 50 gms, finely chopped
  • Carrot - 50 gms, finely chopped
  • Lamb pepperoni slices - 4 each ramekin
  • Bacon - 20 grams, finely chopped, fat removed.
  • Garlic - 2 cloves, finely chopped
  • Green chilies - 2 small, finely chopped
  • Grated cheese - 1 tsp.
  • Butter - 5 gms.
  • Chilly flakes - 1/2 tsp.
  • Salt and pepper to taste
How to prepare:
  • Preheat the oven on 200 degrees.
  • In a bowl, microwave beans and carrots till they are soft.
  • In a pan, add butter and heat it. When the butter is warm, add garlic and green chilies and saute till the raw smell of the garlic is gone. 
  • Add bacon and saute  till it is crisp. 
  • Add chilly flakes, salt and pepper to taste and saute for 10 seconds. Since the white sauce also has salt, be careful with the amount of salt that you add to the bacon.
  • Now add the boiled vegetables and saute till the vegetables are crispy. 
  • Gently pour white sauce to the vegetables and mix so that it blends with the vegetables and bacon.
  • In a ramekin, place pepperoni to make the sides and the base. Pour the vegetable  and the white sauce mix in the ramekin. Add a slice on the top like a hat and sprinkle some grated cheese.
  • Bake the vegetables on 180 degrees for 10 - 12 minutes.

Serve with garlic bread or grilled chicken or grilled fish and enjoy!
