Chicken Curry in Coconut Milk with Rice

Here is my take on chicken curry in coconut gravy with rice.

For the chicken

  • Chicken- 250 gms, Boneless, cut in small pieces
  • Green Chilies - 2 / 3 based on how spicy you would like the chicken to be
  • Dry red chilies - 2
  • Curry leaves - 5 - 10
  • Coconut milk - 1.5  Homemade Coconut Milk carton, small
  • Turmeric - 1/2 tsp.
  • Red chili powder - 1/2 tsp.
  • Jeera powder - 1/2 tsp
  • Black pepper - 1/2 tsp.
  • Coriander powder - 1/2 tsp
  • Onions - 1 finely chopped
  • Water - 2 cups
  • Salt to taste
  • Coriander leaves - 1 bunch
  • Ginger - 1 tsp.
  • Garlic - 1/2 tsp.
For the fried rice
  • Basmati rice - 1 cup, washed
  • Water - 2 cups
  • Jeera - 1/2 tsp

Preparation - For the fried rice
  • Wash and soak the rice for 30 minutes.
  • In a pan add 1 cup of soaked rice and 2 cups of water. Cook the rice and drain the excess water.
For the chicken
  • In a wok, add oil. When the oil is hot, add the onions and saute till the onions are golden brown.
  • In a mixer grinder add green chilies, coriander, garlic and ginger and make a fine paste.
  • When the onions have turned golden, add the chili coriander paste and saute.
  • Now add the dry spices except salt and garam masala and saute for 30 seconds. The dry spices will begin to stick to the wok, so keep the flame low.
  • In a bowl, add half of coconut milk and 1 cup of water and make a thin coconut milk base.
  • Add it to the onion and spice mix and mix well.
  • Add the diced and clean chicken and mix it in the thin coconut milk. Add salt to taste. Cover with a lid and allow to cook for 20 minutes or till the chicken is soft and cooked.
  • Lower the flame, add the remaining coconut milk and allow one boil. 
  • In a frying pan, add 1 tsp of oil. When the oil is hot, add the dry red chilies, curry leaves and mustard seeds. When the seeds crackle, turn off the flame. Pour the dry mix on the chicken as a garnish.
